The grapes used for this wine come from some vineyards situated on south and south-easterly exposure, and located in calcareous-clay soils of mixed consistency.
After soft pressing, the free-run must is kept at a low temperatures until the prise de mousse in pressurised tanks, in order to obtain a sparkling wine which is always fresh and fragrant.
